1. Stroll the Winding Streets 

Aix is an interesting place to stroll around. Known as a city for culture lovers, Aix is home to colourful boutiques and bustling markets making for a pleasant walking experience especially in the old town that is mostly pedestrianised. Discover the many fountains that are scattered throughout the town such as Fontaine de la Rotonde located close to the tourist office. The Town Hall is also an important landmark of the town and Musée Granet is the most famous.

One of the most popular areas of the city center is quartier Mazarin where you will admire the Fontaine des Quatre Dauphins, the Cours Mirabeau and its plane trees lined with beautiful 18th-century mansions. A trip to Aix en Provence would not be complete without mentioning post impressionist painter Paul Cézanne that lived here. In fact, it is still possible to visit Atelier Cézanne, his workshop. Another great artist to have left his print here is Victor Vasarely and a foundation can be visited here.

2. Eat

With plenty of tasty Mediterranean dishes on offer in the many classy and rustic restaurants including Bouillabaisse - the king of regional dishes - Aix will be foodie heaven for some. Moreover, if you have a sweet tooth then you’ll really be in your element in Aix. Chocolate, croissants and calissons are plentiful in town and the bakeries and chocolate shops that sell them are glistening establishments. 

3. Be Entertained

Aix-en-Provence is a city of art and culture. Therefore it should come as no surprise to find various artists performing throughout the town especially in summertime. Concerts, whether that be pop, opera, rock or jazz are plentiful. Aix also plays host to some of the best literary and music festivals in the south of France, many of them taking place outdoors, and in summer you’ll be sure to catch one.

The fields around Aix are a stunning sight. Miles upon miles of purple fields, occasionally complimented by sunflower fields fill the Provence countryside making a tour with Ophorus to these destinations an absolute must.

Provence Wines

Speaking of Wine, there are numerous Wine Tours in Provence that can be organized departing from Aix en Provence. One of the most emblematic wine region here is Châteauneuf du Pape that produces some of the best Syrah wines in the World. Other famous wine producing areas of Provence include Tavel for the Rosé Wines, Bandol and Cassis or lesser known Coteaux d’Aix.

The Châteauneuf du Pape Appellation was one of 6 to be labeled as the first AOC wines of France in 1936. The vineyards planted by the Romans were extended and developed by the Pope's residing in Avignon popes during the 14th century.

In 1314, Clement V, the first Avignon Pope discovered the special soil of Châteauneuf-du-Pape. His successor, John XXII supports him and it was during his reign that the vineyard really took off and spread fame beyond the borders of “The Comtat”.

The former bishop of Avignon, Jacques Duèse was elected as Pope John XII and succeeded Clement V in 1316. He regularly drank the wines from the vineyards ‘in the north’ and did much to improve viticulture practices there.

The Pope sought a place sufficiently far from the city to discourage courtiers, sycophants, and scroungers, yet close enough so that a courier could go there and back to Avignon on the same day. The ideal spot was found on a hillock overlooking the Rhône Valley about halfway between Avignon and Orange – Châteauneuf – and this area was placed directly under his authority.

The Sainte-Victoire Mountain wine region was recognized as an A.O.P territory in 2005 for both the red and rosé wines. This recognition came after years of hard work made by the winemakers to establish that the local 'terroir' was unique and should be highlighted within the Côtes de Provence wine region.

The territory benefits from a wide variety of geological features and landscapes, a warm and dry climate enhanced by the Mistral wind the local wine growers best friend as it chases away many diseases that can impact vines.

There are three types of wines that are produced here: Rosé wines have a pale color with a high aromatic complexity. The main notes are floral, fresh fruits as well as exotic fruits to which can be added spices and aromas.

The red wines, depending on the grape varieties used, are fresh and can be laid down. Red wines of Côtes de Provence Sainte-Victoire can be subtle with notes of red fruits or flowers. Some red wines can also be very generous, mostly full bodied as they are aged in oak vats known as Foudres or Foeders or traditional oak barrels. These red wines can definitely be laid down for years as they will develop deep velvety flavors over time.

Finally, the white wines are traditionally 'Blanc de Blanc' which means that they are made only with white grape varieties. They offer nice colors of pale gold with reflections of green. Sainte-Victoire white wines are known to be well balanced between freshness and unctuousness.
