DESCRIPTION :
Today depart for the Tarn region. First discover all the secrets of one of the most famous cheeses of France: Roquefort. 2nd most eaten cheese in France it is one of the world's best-known blue cheeses. Though similar cheeses are produced elsewhere, European law dictates that only those cheeses aged in the natural Combalou caves of Roquefort-sur-Soulzon may bear the name Roquefort. The cheese is white, tangy, crumbly and slightly moist, with distinctive veins of green mold. During a visit of a cheese maker, you will find out the process involved in the making of this incredible blue cheese.
Then head for the town of Millau to discover the viaduct, a cable-stayed road-bridge that spans the valley of the river Tarn. Designed by the British architect Norman Foster and French structural engineer Michel Virlogeux, it is the tallest bridge in the world, and is part of the A75-A71 highway axis from Paris to Montpellier. Construction cost was approximately €400 million. After a stop at the information center and some photo stops, drive to the Tarn Canyon. Night in or around St Enimie.
